Holiday Special Recipe: Thanksgiving-Ready Pie Dough
Whether you’re making pecan pie, sweet potato pie, or a savory pot pie for the holiday table, this simple, buttery dough is one of those “master once, use forever” recipes. It’s reliable, tender, and perfect for Thanksgiving or any holiday gathering where comfort food reigns supreme
Ingredients
1 ½ cups all-purpose flour
Pinch of salt
8 tablespoons (1 stick) butter, at room temperature
5 to 6 tablespoons ice water
Instructions
1. COMBINE
Add the flour and salt to a medium bowl. Using your hands, gently work the butter into the flour until the butter pieces are each about the size of a dime.
2. MIX
Create a well in the center of the mixture. Pour in 5 tablespoons of the ice water. Fold gently to bring the dough together.
If the dough feels too dry or crumbly, add up to 1 extra tablespoon of ice water.
3. FORM
Fold until the dough just comes together. Try not to overwork it, this keeps it tender.
4. CHILL
Wrap the dough tightly in plastic wrap and refrigerate for at least one hour before rolling.
5. USE
Roll out according to the directions in any recipe that calls for a single-crust pie dough.
